HIRING SOUS CHEFS
The ideal candidates have a strong passion for culinary excellence and a keen eye for detail. The Sous Chef will assist the Executive Chef in providing exceptional food quality and presentation.
Duties and Responsibilities:
- Oversee and assist the kitchen staff in all aspects of food production
- Assist the Executive Chef in designing, costing, and executing high-end seasonal
- menus for fine dining, banquets, and in-room dining
- Evaluate food products to ensure consistent quality standards
- Establish and maintain a regular maintenance schedule for all kitchen areas and equipment
- Manage daily kitchen workflows, ensuring all mise en place is completed accurately and efficiently
- Provide training and professional development opportunities for all kitchen staff
- Helps in the design of food and drink menu.
- Produces high quality plates, including both design and taste.
- Oversees and supervises kitchen staff.
- Assists with menu planning, inventory, and management of supplies.
- Ensures that food is top quality and that kitchen is in good condition.
- Keeps stations clean and complies with food safety standards.
- Offers suggestions and creative ideas that can improve upon the kitchen’s performance.
- Enforce rigorous food safety and sanitation guidelines, ensuring full compliance with Uganda’s Ministry of Health regulations, HACP protocols, and global hotel standards.
- Inspect equipment daily for maintenance needs and ensure all kitchen areas are spotless
- Orders food supplies.
- Monitors and maintains kitchen equipment.
- Solves problems that arise and seizes control of issues in the kitchen.
Requirements & Qualifications:
- 3 to 5 years in luxury hotel or fine dining kitchens, with at least 2 years in a similar supervisory role.
Education: A diploma or degree in Culinary Arts, Hospitality Management, or a related field is a distinct advantage.
- Skills: Strong working knowledge of A la carte dining, menu pricing, food controls, and basic administrative/computer skills.
- Compliance: Certifications in food handling, sanitation (e.g., HACP), and basic occupational health and safety.
- Location context: Familiarity with the East African gastronomy scene and local sourcing in Uganda is highly valued.
- Excellent interpersonal and verbal communication skills
- Highly organized with excellent attention to detail
